Here is a very simple cranberry cake recipe that is both tart and sweet. Great combination for winter. Every time I bring this to a potluck, I get asked for the recipe, so I thought I’d post it in my blog.
Cranberry-Chocolate Chip Cake
1 cup flour (can use half wheat)
3/4 c. white sugar
1/4 teas. salt
1/4 c. olive oil (or butter, melted)
1/4 c. applesauce
1 teas. vanilla
1 teas. cinnamon
2 cups cranberries
1/2 c. chocolate chips
1) Preheat oven to 350 degrees. Grease 8×8 baking pan.
2) Mix all but cranberries and chocolate chips. Then add them. Spread batter into pan.
3) Bake at 350 for 40 minutes or until done.
Fabulous when warm. Darn good when cold.
Double (and put in 9×13 pan) if bringing to a potluck.
(Note: can use blueberries and almonds and lemon zest instead of cranberries, chocolate chips and cinnamon. It makes a different, but fabulous cake especially when blueberries are in season.)
